Carbon steel is a steel alloy comprised mainly of iron and carbon. Manganese, silicon and copper may also be present in small amounts, but they do not affect the properties of the steel.
Stainless steel consists of iron and chromium. It is very strong and features corrosion resistance and a smooth finish. A film of chromium oxide on the surface of stainless steel protects it from oxidation, which causes corrosion. Stainless steel can take the form of austenitic stainless steel (used for cookware, food and beverage equipment and industrial applications), ferritic stainless steel (used for furnaces, automotive exhaust systems and appliances) and martensitic stainless steel (used for cutlery, sports knives and tools).
